About 15 cups, chopped, or other greens such as bok choy, swiss chard, or kale

Instructions
Preheat oven to 350°F.
Sauté onions and garlic in butter over medium heat. When onions are soft, add spinach. Cook for 2 minutes or until wilted.
Combine all ingredients in a large bowl and mix well. Spread into a well-greased casserole dish and cover with foil.
Bake for 35 minutes.
Remove the foil and bake for 10 minutes.
