- 3-4 pounds Chicken Thighs, or breasts - cut into bite size pieces or shredded
- 2 cups Chicken Broth Low-sodium, or water
- ¼ teaspoon Cayenne Pepper
- 1 Onion Minced
- 1 dash Nutmeg
- 8 ounces Tomato Sauce
- 1 Tablespoon Butter Unsalted
- 1 cup Peanut Butter Low-sodium
- Salt To taste
- Pepper To taste
Place chicken in an oven-safe dish and add chicken broth, bake in oven preheated to 350 degrees F. for 30 min.
In another pan, sauté butter, onion, tomato sauce, nutmeg, and cayenne pepper for 3 minutes over medium heat.
Add chicken and 1.5 cups of the broth that was cooked with the chicken, cover and allow to simmer for 15 minutes.
Add peanut butter, stir to thicken, and place in a 350 degree F. oven for 30 minutes, uncovered.
