Broccoli Apple Salad

This Broccoli Apple Salad is the perfect easy side dish for spring and summer barbecues, potlucks and picnics. Best of all, it’s so easy to make with broccoli, apples, almonds, dried cranberries and a homemade tasty dressing.

Ingredients

  • 6 cups Broccoli
  • ½ cup Carrots Shredded
  • ¼ cup Red Onion Diced
  • 2 Apples Gala
  • cup Dry Roasted Or sunflower seeds, toasted almonds; sliced
  • cup Cranberries Dried

Dressing

  • ¾ cup Plain Greek Yogurt
  • ¼ cup Mayonnaise Low-fat
  • 2 Tablespoons Apple Cider Vinegar
  • ½ Tablespoon Honey
  • ¼ teaspoon Salt
  • teaspoon Pepper

Instructions

  • In a large bowl combine broccoli, carrots, red onion, apples, almonds, and dried cranberries.
  • In a medium bowl whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt and pepper.
  • Add the dressing to the salad and toss to coat.
  • Refrigerate for at least one hour.

Notes

  • Make this recipe dairy free by using a dairy free yogurt.
  • Store in an airtight container for 3 days in the refrigerator.
