Ingredients

BBQ Sauce

  • 4 Medjool Dates Pits removed
  • ½ cup Water
  • cup Tomato Sauce
  • Tablespoons Apple Cider Vinegar
  • 1 Tablespoon Chili Powder
  • 2 teaspoons Paprika
  • 2 teaspoons Onion Powder
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Mustard Powder

Jackfruit

  • 1 Tablespoon Avocado Oil
  • 1 Onion Medium
  • 2 cans Jackfruit Green, in brine not syrup

Instructions

  • Place the pitted dates in a small bowl with hot water. Let sit for about 2 minutes to soften. Pour the dates and water to a blender or food processor and blend until smooth.
  • Tip: If you blender is having a hard time blending that small amount, add the tomato sauce to the blender to help get things moving. 
  • Add the blended dates and remaining sauce ingredients to a small or medium sauce pot and whisk together over a medium low heat. Taste and season as necessary. Let simmer and stir occasionally as you prep the jackfruit. 
  • Heat the oil in a large skillet. When the oil is hot add the chopped onion and cook for 5-7 minutes until the onion is soft.
  • While the onions are cooking drain and rinse jackfruit.
  • Add the rinsed jackfruit and continue stirring and cooking another 5-7 minutes. The jackfruit will soften and become easy to mash and pull apart. Use a wooden spoon to break up the large chunks.
  • Pour in the prepared BBQ sauce and stir, coating everything in sauce. 

Notes

  • Keep refrigerated for up to four days.
