Warm and Nutty Cinnamon Quinoa

Ingredients 

  • 1 cup Milk Low-fat
  • 1 cup Water
  • 1 cup Quinoa
  • 2 cups Blueberries Or any berry
  • ½ teaspoon Cinnamon
  • cup Nuts Chopped (pecans, almonds, walnuts)
  • 4 teaspoons Honey

Equipment

  • Stovetop
  • Medium Saucepan
  • Skillet

Instructions

  • Combine milk, water, and quinoa in a medium saucepan. 
  • Bring to a boil over high heat.
  • Reduce heat to medium low; cover and simmer 15 minutes or until most of the water is absorbed.
  • Turn off heat and let stand covered for 5 minutes.
  • Stir in blueberries and cinnamon.
  • Toast the nuts in a dry skillet over medium heat for about 3 minutes.
  • Serve warm with nuts and honey drizzled on top.
