This Vegan Single Serving Brownie is a go-to recipe when you want a quick and healthy sweet treat for one! This dessert is full of chocolate, naturally sweetened, and ready in minutes.

Ingredients 

  • 2 Tablespoons Pure Maple Syrup
  • 1 Tablespoon Coconut Oil
  • ¼ teaspoon Vanilla Extract
  • 3 Tablespoons Cocoa Powder Unsweetened
  • ½ teaspoon Sea Salt Divided
  • 2 teaspoons Chocolate Chips Vegan

Equipment

  • Small Mixing Bowl
  • Oven-Safe Dish
  • Parchment Paper

Instructions

  • Preheat the oven to 350ºF. Line an oven safe dish with parchment paper or rub with coconut oil.
  • In a small bowl, whisk together coconut oil, maple syrup, and vanilla with a fork. Add cocoa powder, flour, and ¼ teaspoon salt. Continue stirring until all the dry ingredients are incorporated and the mixture has thickened slightly. Stir in 1 teaspoon chocolate chips.
  • Transfer the batter to the oven-safe dish and smooth out the top. Sprinkle with the remaining chocolate chips and salt.
  • Bake 9 minutes. Allow to cool slightly before enjoying. You can either remove the brownie using the parchment paper or eat it straight out of the oven-safe dish.
