Teriyaki Meatballs
Teriyaki Meatballs, made with ground turkey, are a healthy and flavorful meal prep option. Coated in a sweet and savory teriyaki sauce, they're easy to make and perfect served over brown rice and veggies for quick, nutritious meals.
Ingredients

- 2 pounds Ground Turkey
- ½ cup Bread Crumbs
- 1 Egg
- 2 Green Onions Thinly Sliced
- 2 cloves Garlic Minced
- 1 Tablespoon Ginger
- 1 teaspoon Soy Sauce Low-Sodium
- ½ teaspoon Black Pepper
Teriyaki Sauce
- ¼ cup Soy Sauce
- 1 Tablespoon Cornstarch
- 2 Tablespoons Brown Sugar
- ½ teaspoon Ginger
- ¼ teaspoon Garlic Powder
- 3 Tablespoons Honey
- ⅓ cup Water
- Sesame Seeds Optional; to garnish
- Green Onions Optional; to garnish, chopped

Instructions
- Preheat oven to 400℉. Combine ground turkey, bread crumbs, eggs, green onions, garlic, ginger, soy sauce, and pepper in a large mixing bowl. Using a spoon or clean hands, stir until well combined.
- Roll the mixture into 1¼ to 1½-inch meatballs. Place meatballs on a baking sheet sprayed with non-stick spray. Bake until golden brown and cooked through, about 20-25 minutes.
- In a small mixing bowl, whisk together cornstarch and ¼ cup water; set aside.
- In a small saucepan over medium heat, add soy sauce, brown sugar, ginger, garlic powder, honey, and ⅓ cup water; bring to a simmer. Add cornstarch into mixture and stir until thickened enough to coat the back of a spoon, about 2 minutes.
- Toss meatballs immediately with teriyaki sauce, garnished with green onion and sesame seeds, if desired.
Notes
- Serve over brown rice and a side of veggies for a complete and balanced meal!
