Teriyaki Meatballs

Teriyaki Meatballs, made with ground turkey, are a healthy and flavorful meal prep option. Coated in a sweet and savory teriyaki sauce, they're easy to make and perfect served over brown rice and veggies for quick, nutritious meals.

Ingredients 

Meatballs

  • 2 pounds Ground Turkey
  • ½ cup Bread Crumbs
  • 1 Egg
  • 2 Green Onions Thinly Sliced
  • 2 cloves Garlic Minced
  • 1 Tablespoon Ginger
  • 1 teaspoon Soy Sauce Low-Sodium
  • ½ teaspoon Black Pepper

Teriyaki Sauce

  • ¼ cup Soy Sauce
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Brown Sugar
  • ½ teaspoon Ginger
  • ¼ teaspoon Garlic Powder
  • 3 Tablespoons Honey
  • cup Water
  • Sesame Seeds Optional; to garnish
  • Green Onions Optional; to garnish, chopped

Equipment

  • Small Saucepan
  • Small Mixing Bowl
  • Large Mixing Bowl
  • Baking Sheet

Instructions

  • Preheat oven to 400℉. Combine ground turkey, bread crumbs, eggs, green onions, garlic, ginger, soy sauce, and pepper in a large mixing bowl. Using a spoon or clean hands, stir until well combined.
  • Roll the mixture into 1¼ to 1½-inch meatballs. Place meatballs on a baking sheet sprayed with non-stick spray. Bake until golden brown and cooked through, about 20-25 minutes.
  • In a small mixing bowl, whisk together cornstarch and ¼ cup water; set aside.
  • In a small saucepan over medium heat, add soy sauce, brown sugar, ginger, garlic powder, honey, and ⅓ cup water; bring to a simmer. Add cornstarch into mixture and stir until thickened enough to coat the back of a spoon, about 2 minutes.
  • Toss meatballs immediately with teriyaki sauce, garnished with green onion and sesame seeds, if desired.

Notes

  • Serve over brown rice and a side of veggies for a complete and balanced meal!
