Sweet Potato Avocado Toast

This Sweet Potato Avocado Toast recipe is perfect for breakfast, lunch, or a healthy snack! Crispy sweet potato slices topped with creamy avocado, and your favorite toppings.

Ingredients 

  • 1 Sweet Potato
  • 1 Avocado
  • 2 Tablespoons Olive Oil
  • Egg Optional topping
  • Every but the Bagel Seasoning Optional topping
  • Salt To taste
  • Black Pepper To taste

Equipment

  • Oven
  • Baking Sheet
  • Parchment Paper

Instructions

  • Preheat oven to 400℉.
  • Carefully slice sweet potatoes lengthwise into ⅓ inch slices.
  • Line a baking sheet with parchment paper.
  • Drizzle sweet potato slices with olive oil and place slices down on the baking sheet. Bake for 15-20 minutes, flipping halfway through until crisp on the outside or fork tender on the inside.
  • Let sweet potato slices cool slightly then top with avocado, salt, pepper, egg, and other optional toppings you like. Serve immediately.
  • Store cooked, un-topped sweet potato slices in an airtight container in the refrigerator. Reheat in the toaster oven or on a baking sheet in the oven.
