Sweet Potato Avocado Toast
This Sweet Potato Avocado Toast recipe is perfect for breakfast, lunch, or a healthy snack! Crispy sweet potato slices topped with creamy avocado, and your favorite toppings.
Ingredients
- 1 Sweet Potato
- 1 Avocado
- 2 Tablespoons Olive Oil
- Egg Optional topping
- Every but the Bagel Seasoning Optional topping
- Salt To taste
- Black Pepper To taste

- Baking Sheet
- Parchment Paper
Instructions
- Preheat oven to 400℉.
- Carefully slice sweet potatoes lengthwise into ⅓ inch slices.
- Line a baking sheet with parchment paper.
- Drizzle sweet potato slices with olive oil and place slices down on the baking sheet. Bake for 15-20 minutes, flipping halfway through until crisp on the outside or fork tender on the inside.
- Let sweet potato slices cool slightly then top with avocado, salt, pepper, egg, and other optional toppings you like. Serve immediately.
- Store cooked, un-topped sweet potato slices in an airtight container in the refrigerator. Reheat in the toaster oven or on a baking sheet in the oven.
