Succotash Salad

Ingredients 

  • 5 Ears of Corn
  • 2 Tomatoes Diced
  • 2 Squash Cut into bite-size pieces
  • 2 Zucchini Cut into bite-size pieces
  • 25 Green Beans Stemmed and cut
  • 1 bunch Scallions Or cooked onions
  • Fresh Herbs Optional, basil tarragon, parsley, or cilantro
  • Brine From hot and sweet pickles

Instructions

  • Mix all the ingredients in a large bowl. Mix well and serve cold.
