Smashed Carrots
Smashing steamed carrots coated in curry powder then finishing them under the broiler lets the flavor set in and gives the carrots a light, crispy edge.
Ingredients
- 1 pound Carrots Cut into 1/2 inch pieces
- 2 Tablespoons Olive Oil Or vegetable oil
- 1 teaspoon Curry Powder
- ¼ teaspoon Curry Powder
- ¼ teaspoon Ground Pepper
- Cilantro Chopped, for garnish

- Baking Sheet
- Large Pot
- Stovetop
Instructions
- Position oven rack 6 inches from broiler.
- Bring a few inches of water to a boil in a large pot fitted with a steamer basket. Steam carrots until tender, 14 to 18 minutes.
- Preheat broiler to high. Transfer the carrots to a large rimmed baking sheet. Drizzle with oil and toss to coat. Space the carrot pieces evenly on the pan, then flatten with the bottom of a mason jar or sturdy glass. Combine curry powder, salt and pepper in a small bowl. Sprinkle over the carrots. Broil until hot and starting to brown, about 4 minutes. Sprinkle with cilantro before serving, if desired.
