Ingredients
- 3⅓ pounds Rabbit Pieces
- 2 Tablespoons Olive Oil
- 8 cloves Garlic Divided
- 2 Tablespoons Rosemary Or spices of your choice
- ½ cup Water
- Salt To taste
- Ground Black Pepper To taste

Instructions
- Place the rabbit meat pieces in a roasting tin.
- In a small bowl mix olive oil, 4 grated garlic cloves, rosemary (or spices of your choice), salt, and pepper.
- Pour over the meat and turn the meat a few times in the marinade to coat it all over. Cover with plastic wrap or cling film and marinate for at least 1 hour, preferably 3-4 hours. Remove from the fridge about 30 minutes before cooking.
- Preheat oven to 400°F.
- Add the remaining 3-4 whole garlic cloves to the roasting pan. Pour in the water.
- Bake for about 30-40 minutes, flipping the meat pieces about every 10 minutes. Checking with a thermometer is the best way to ensure that the rabbit is safe to eat but not overcooked, meat should reach 160°F. If you overcook it, it will become dry.
