Chicken Salad sandwich with raisins

Rotisserie Chicken Salad

This Rotisserie Chicken Salad is made with low-fat mayo, red onion and celery for a quick and easy meal. It's perfect for meal prep and delicious served on a sandwich or with crackers. 

Ingredients 

  • 2 cups Rotisserie Chicken Or canned chicken
  • ¼ cup Red Onion Diced
  • ½ cup Celery Chopped
  • ½ cup Mayonnaise Low-fat
  • ½ Tablespoon Dijon Mustard
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper

Equipment

  • Large Mixing Bowl

Instructions

  • Add chicken, red onion, celery, mayo, mustard, salt and pepper into a large bowl.
  • Stir to combine. Taste and add more salt and pepper or mayo, if needed.
  • Enjoy right away or chill before serving. Serve with crackers for a snack or appetizer, on bread or a wrap for a sandwich or over a bed of greens.
