Moambe Chicken Stew

Ingredients
- 3-4 pounds Chicken Thighs, or breasts – cut into bite size pieces or shredded
- 2 cups Chicken Broth Low-sodium, or water
- ¼ teaspoon Cayenne Pepper
- 1 Onion Minced
- 1 dash Nutmeg
- 8 ounces Tomato Sauce
- 1 Tablespoon Butter Unsalted
- 1 cup Peanut Butter Low-sodium
- Salt To taste
- Pepper To taste

Instructions
- Place chicken in an oven-safe dish and add chicken broth, bake in oven preheated to 350 degrees F. for 30 min.
- In another pan, sauté butter, onion, tomato sauce, nutmeg, and cayenne pepper for 3 minutes over medium heat.
- Add chicken and 1.5 cups of the broth that was cooked with the chicken, cover and allow to simmer for 15 minutes.
- Add peanut butter, stir to thicken, and place in a 350 degree F. oven for 30 minutes, uncovered.
