Moambe Chicken Stew

Enjoy rich, flavorful Moambe Chicken Stew, a traditional Central African dish made with chicken, tomato sauce, and spices.

Ingredients 

  • 3-4 pounds Chicken Thighs, or breasts – cut into bite size pieces or shredded
  • 2 cups Chicken Broth Low-sodium, or water
  • ¼ teaspoon Cayenne Pepper
  • 1 Onion Minced
  • 1 dash Nutmeg
  • 8 ounces Tomato Sauce
  • 1 Tablespoon Butter Unsalted
  • 1 cup Peanut Butter Low-sodium
  • Salt To taste
  • Pepper To taste

Equipment

  • Oven
  • Stovetop
  • Oven-Safe Dish
  • Pan

Instructions

  • Place chicken in an oven-safe dish and add chicken broth, bake in oven preheated to 350 degrees F. for 30 min.
  • In another pan, sauté butter, onion, tomato sauce, nutmeg, and cayenne pepper for 3 minutes over medium heat.
  • Add chicken and 1.5 cups of the broth that was cooked with the chicken, cover and allow to simmer for 15 minutes.
  • Add peanut butter, stir to thicken, and place in a 350 degree F. oven for 30 minutes, uncovered.
