Mango and Black Bean Salad

Use red bell pepper to add more color to this refreshing salad.

Ingredients 

  • 1 can Black Beans Rinsed and drained
  • 2 cups Mango Peeled and pitted
  • ¼ cup Green Onions Sliced
  • ¼ cup Red Bell Peppers Chopped
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Orange Juice
  • 1 Tablespoon Cilantro chopped
  • ½ teaspoon Chili Powder
  • ¼ teaspoon Ground Cumin

Equipment

  • Large Mixing Bowl

Instructions

  • Mix together all ingredients in a large bowl.
  • Salad may be served right away but is best if covered and chilled for at least 1 hour for flavors to blend.
