Loaded Zucchini Bites with sour cream, chives, bacon bits

Loaded Zucchini Bites

These low-carb zucchini bites have all the toppings of a loaded baked potato, without the potato! Melted cheese, bacon, chives and a dollop of sour cream make these bites perfect for game day or anytime you're craving comfort food.

Ingredients 

  • 3 Zucchini Large, trimmed, and cut into 1-inch rounds
  • ½ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper
  • cup Cheddar Cheese Low-fat
  • ¼ cup Sour Cream Low-fat
  • 2 slices Turkey Bacon Chopped, cooked
  • Chives For garnish

Equipment

  • Oven
  • Baking Sheet

Instructions

  • Position oven rack 6 inches from broiler. Preheat to 400°F. Lightly coat a large rimmed baking sheet with cooking spray.
  • Arrange zucchini rounds in a single layer on the prepared baking sheet. Sprinkle with salt and pepper. Bake on the upper rack until just tender, about 15 minutes. Remove from the oven. Turn broiler to high.
  • Evenly top the zucchini with cheese. Broil until melted and lightly browned, 2 to 3 minutes. Top with sour cream and bacon and garnish with chives (or scallion greens) and pepper, if desired.
