Ingredients 

  • 8 ounces Spaghetti
  • 1 Tablespoon Olive Oil
  • 2 Garlic Cloves Minced
  • 2 cups Cremini Mushrooms
  • 1 Red Bell Pepper Sliced
  • 1 Carrot Sliced
  • ½ cup Snow Peas
  • 3 cups Bok Choy Roughly chopped
  • 2 Tablespoons Soy Sauce Reduced sodium
  • 2 teaspoons Sugar Or less
  • 1 teaspoon Sesame Oil
  • ½ teaspoon Ground Ginger
  • ½ teaspoon Sriracha Sauce

  • Stovetop
  • Large Pot
  • Small Bowl
  • Large Skillet

Instructions

  • In a large pot of boiling water, cook spaghetti according to package instructions; drain well.
  • In a small bowl, whisk together the soy sauce, sugar, sesame oil, ginger, Sriracha sauce. Set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add garlic, mushrooms, bell pepper, carrots. Stir frequently until tender- about 3 to 4 minutes. Stir in snow peas, bok choy; cook another 2 to 3 minutes.
  • Stir in the drained spaghetti, and the soy sauce mixture. Gently toss to combine.
  • Serve immediately.
