Chicken, Tomatoes, Spinach, and Pasta in a Skillet

Chicken Pesto Skillet

Ingredients 

  • 1 package Noodles
  • 12 oz Chicken Breast Stir Fry Tips
  • 2 cups Bell Pepper Red or green, thinly sliced
  • 2 cups Broccoli Florets
  • 1 cup Tomatoes Grape, halved
  • 1/3 cup Pesto
  • 2 Tbsp Lemon Juice
  • Black Pepper To taste
  • 2 Tbsp Basil Fresh, thinly sliced

Equipment

  • Saucepan
  • Skillet or Frying Pan

Instructions

  • Cook pasta according to package directions in a saucepan. Drain; set aside.
  • Spray a large skillet with oil spray and heat over medium-high heat. Add chicken; cook and stir for 2 to 3 minutes or until lightly browned. Add bell pepper and broccoli; cook for 2 minutes more or until vegetables are crisp-tender.
  • Reduce heat to low. Add tomatoes, pesto, lemon juice, and cooked pasta. Stir to combine. Sprinkle with black pepper and fresh basil for serving.
