Chicken Avocado Ranch Burrito
This recipe is loaded with delicious flavors and filled with ingredients that will keep you energized and full. Swap out the chicken breasts with rotisserie or canned chicken for when you're busy and need a quick bite to eat!
Ingredients
- 1 pound Chicken Boneless skinless breasts, thighs, rotisserie, or canned chicken
- ½ cup Ranch Dressing
- 1 teaspoon Ground Cumin
- 1 Tablespoon Olive Oil Or vegetable oil
- 4 Whole Wheat Tortillas
- 2 Avocado Diced
- 1 cup Mozzarella Cheese Shredded
- ½ bunch Parsley Chopped, or 1 teaspoon dried parsley
- ½ bunch Green Onions Sliced
Equipment
- Stovetop
- Medium Skillet
Instructions
- Prepare the ranch dressing.
- Place the diced chicken together with half of the ranch and the cumin to a bowl. Stir to combine and allow it to marinate for 20 minutes over the counter.
- Heat the oil in a medium skillet over medium heat.
- Cook the chicken in a single layer, until browned and cooked through.
- Divide the cooked chicken among your 4 tortillas, arranging it in the center of each.
- Top with avocado, mozzarella, parsley and green onions.
- Roll the tortillas and cook in a preheated pan (over medium-low heat) for about 3-4 minutes per side, or until golden.
