Ingredients 

  • 1 Avocado Pitted and peeled
  • 2 Eggs Boiled
  • 1 Tablespoon Mayonnaise Low-fat
  • Salt & Pepper To taste

Equipment

  • 1 Small Mixing Bowl

Instructions

  • In a small mixing bowl, combine the hard boiled eggs, avocado, and mayonnaise.
  • Mash with a fork until desired consistency is reached. Season with salt and pepper, to taste.
  • Spread between two slices of bread for an Avocado Egg Salad Sandwich. Eat with crackers, cut up veggies, on toast, or in a wrap.
