- 1 Fennel Bulb Or cabbage
- Pickled Carrots Optional
- 1 Shallot
Dressing
- Salt To taste
- Black Pepper To taste
- Vinegar
- Brine From pickles

Instructions
- Thinly slice or grate the apples, carrots, fennel, shallot, and pickled carrots in a medium serving bowl.
- Mix together salt, pepper, vinegar, and pickle prine for the dressing in a small bowl. Add dressing to the vegetables.
- Allow slaw to marinate for at least 15 minutes.
- Enjoy! Serve with tacos, pork, or on it's own.
