Apple Enchiladas

These apple enchiladas can replace a more traditional dessert like cake and ice cream at a birthday party. With more nutrients and flavor, they will be a hit!

Ingredients 

For Enchilada

  • 6 Tortillas Flour
  • 6 Apples
  • 1 Tbsp Butter Softened
  • 1 tsp Cinnamon
  • 1 1/2 tsp Brown Sugar

For Sauce

  • 4 Tbsp Butter Softened
  • 1/3 cup Brown Sugar
  • 1/3 cup Water
  • 1 tsp Cinnamon

Equipment

  • Baking Sheet 8×8
  • Skillet Or frying pan
  • Medium Saucepan

Instructions

  • Peel, core and slice apples.
  • Preheat oven to 350°F.
  • Coat an 8×8 inch baking pan with butter or oil.
  • Prepare filling.
  • Prepare sauce.
  • Soften tortillas by heating them up for a few seconds on a warm “comal” while being careful not to burn them; a skillet or shallow pan can also be used.
  • Place soft tortillas on a flat surface; one by one spread a small amount of sauce on the tortilla and fill evenly with apple filling.
  • Roll up tortillas and place side by side, seam side down, in the baking pan you prepared (toothpicks can also be used to keep tortillas from unrolling).
  • Pour remaining sauce evenly over rolled tortillas.
  • Bake for 20 minutes. Serve warm.

Prepare Filling

  • In a frying pan over medium heat: melt 1 tablespoon of butter.
  • Add sliced apples, cinnamon and sugar; cook for 5 minutes.
  • Set aside.

Prepare Sauce

  • In a medium saucepan over medium heat: add butter, brown sugar, water and cinnamon; bring to a boil.
  • Reduce heat and simmer for 3 minutes, stirring constantly.

Notes

Chef’s Tips

  • Try using McIntosh, Granny Smith, or any other firm and tart apples.
  • Try this recipe with pears.
