Creamy Mashed Parsnips

Ingredients 

  • 1 pound Parsnips
  • 2 Tablespoons Butter
  • 1 pinch Salt
  • 1 pinch Nutmeg
  • Ground Black Pepper To taste

Equipment

  • Stovetop
  • Medium Saucepan

Instructions

  • Wash and peel the parsnips. Cut them into about 1-inch chunks, and place in a medium saucepan. Add water to just cover the parsnips.
  • Boil over medium heat until all the liquid has evaporated- about 20 minutes
  • Use a fork to mash the parsnips with butter and salt. Season with nutmeg and pepper.
