Ingredients
- 1 cup Onion Chopped
- 2 cloves Garlic Minced; or 1 teaspoon minced garlic
- 3 Tablespoons Butter
- 1 pound Spinach About 15 cups, chopped, or other greens such as bok choy, swiss chard, or kale
- 4 Eggs Beaten
- 4 cups Rice Cooked; brown or white
- 1 cup Milk
- 1½ cup Cheese Shredded; low-fat
- 2 Tablespoons Soy Sauce Low-sodium
- Ground Black Pepper To taste

Instructions
- Preheat oven to 350°F.
- Sauté onions and garlic in butter over medium heat. When onions are soft, add spinach. Cook for 2 minutes or until wilted.
- Combine all ingredients in a large bowl and mix well. Spread into a well-greased casserole dish and cover with foil.
- Bake for 35 minutes.
- Remove the foil and bake for 10 minutes.
