Spinach-Rice Casserole

Recipe from: Maine EFNEP

Ingredients 

  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced; or 1 teaspoon minced garlic
  • 3 Tablespoons Butter
  • 1 pound Spinach About 15 cups, chopped, or other greens such as bok choy, swiss chard, or kale
  • 4 Eggs Beaten
  • 4 cups Rice Cooked; brown or white
  • 1 cup Milk
  • cup Cheese Shredded; low-fat
  • 2 Tablespoons Soy Sauce Low-sodium
  • Ground Black Pepper To taste

  • Stovetop
  • Oven
  • Large Bowl
  • Casserole Dish
  • Skillet
  • Aluminum Foil

Instructions

  • Preheat oven to 350°F.
  • Sauté onions and garlic in butter over medium heat. When onions are soft, add spinach. Cook for 2 minutes or until wilted.
  • Combine all ingredients in a large bowl and mix well. Spread into a well-greased casserole dish and cover with foil.
  • Bake for 35 minutes.
  • Remove the foil and bake for 10 minutes.
