Turkey Taco Soup
Loaded with beans, ground turkey, tomatoes, and corn, this Easy Taco Soup is hearty, filling, and ready in just 20 minutes! Top with sour cream, cheese, scallions, and other favorite toppings for an easy weeknight dinner the whole family will love.
Ingredients
- Olive Oil Spray
- 1 pound Ground Turkey 99% lean
- 1 Onion Medium, chopped
- 1 Bell Pepper Chopped
- 10 ounces Rotel Tomatoes with Green Chiles
- 15 ounces Corn Canned or frozen, drained
- 15 ounces Kidney Beans No salt added, drained
- 8 ounces Tomato Saue
- 16 ounces Refried Beans Fat-free
- 3½ Tablespoons Taco Seasoning

Instructions
- Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
- Serve with your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.
